I'm sharing with you some recipes from my kitchen. I hope you enjoy them!
Chili
Hearty and delicious.
Perfect warm-up for a chilly day.
Prep Time:
10 minutes
Serves:
6-8
Ingredients
2 Tbsp olive oil
1 large yellow onion, chopped
3 cloves garlic
2 stalks celery, chopped
2-3 cups vegetable broth
3 Tbsp Chili powder
2 Tbsp Cumin powder
1 6oz can tomato paste
16oz Lightlife vegetable crumble
1 16oz can diced tomatoes
1 16oz can kidney beans, drained and rinsed
1 16oz can pinto beans, drained and rinsed
1 red bell pepper diced

Instructions
Sauté onions, celery and garlic in olive oil until soft
Add spices and tomato puree
Add vegetable broth, enough to achieve a thick soup texture
Mix in beans, vegetable crumble and diced tomatoes
Add in red bell pepper and sea salt to taste
Serving suggestion:
Add any of the following toppings:

Cholula hot sauce

Cilantro
-
Diced green onion
-
Daiya dairy free cheddar
-
Dairy free sour cream
Serve with rice or crusty bread
Vegan
Tip:
The texture of this chili is similar to chili with ground beef. It's a nice "transition" meal when moving away from meat.
