I'm sharing with you some recipes from my kitchen.    I hope you enjoy them!

PALEO Banana Bread

Craving bread on PALEO? 

Almond flour saves the day!

Prep Time:

1 hour

Serves:

8 - 10

Ingredients

4 med very ripe bananas, mashed

4 eggs

2 tsp vanilla extract

1/4 cup coconut oil

1 3/4 almond flour

1/2 cup tapioca flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/4 tsp sea salt

Instructions

Preheat oven to 375º F

Line loaf pan with parchment paper

Mix dry ingredients, set aside

Mix wet ingredients

Combine wet and dry ingredients; don't overmix

Pour into loaf pan

Bake in over 50 minute

Done when a knife inserted into the center comes out clean

PALEO

Tip: 

Melt coconut oil over low heat until liquid, then cool to room temp.

Don't overmix!
