Vegetable Fajitas

The spices make this special! 

Top with salsa and guacamole.

Heat up tortillas first to get a good wrap.

Prep Time:

10 minutes

Serves:

3-4

Vegan

Ingredients

2 Tbsp olive oil

1 large yellow onion, chopped

1 cloves garlic

1 pepper, sliced

16oz firm tofu, drained and sliced in thin strips

3 T lemon juice

 

1 tsp Chili powder

1 tsp Cumin powder

1 tsp Paprika

1 tsp Garlic powder

1 tsp sea salt

1 tsp sugar

½ tsp Oregano

½ tsp Onion powder

½ tsp cayenne

¼ tsp pepper, ground

1 Tbsp corn starch

¾ tsp crushed bouillon

½ c water

 

Tortillas

Sour cream

Guacamole

Salsa

Wedges of lime

Instructions

Mix spices with corn starch

Add water and bouillon

Sauté vegetables in oil until translucent

Add spices

Tip: 

Use a combination of peppers: red, yellow, jalapeño, poblano

Also add your favorite veggies!
